But what I didn&#8217;t bargain for was all the things I couldn&#8217;t eat or had to alter or avoid during pregnancy. These included runny eggs, smoked meats and processed foods. I decided almost a year before I had gotten pregnant that I would make some changes to my diet. Less processed foods, less chocolate and snacks, more fruit and vegetables and definitely more healthy recipes. I swapped my bacon twice a week for just on a Saturday morning, cut down red meat to one night a week and ate more lean white meat instead.<\/p>\n<p style=\"text-align: center;\">Trying to do this for just one person is difficult, and it took a number of weeks to convince my husband to swap with me to certain items. I told him we could have everything in moderation. You could still eat a bag of crisps at lunchtime, you could still have a pudding after your evening meal, and we still had a takeaway delivered every fortnight on a Friday. But in between we would snack on healthier choices, eat more vegetables with our evening meal and cut down on the amount of processed meats we were eating.<\/p>\n<p style=\"text-align: center;\">It took about a month, but I began to feel better for the choices that I had made. And once we were in fact expecting, I looked through the internet and my cookbooks to find recipes that I could adapt to our new regime. This included changing minced beef for lean pork mince which is a healthier alternative, removing meat altogether from a recipe in some cases and putting in two vegetables instead, and even making my own cakes and ice creams that didn&#8217;t contain any eggs.<\/p>\n<p style=\"text-align: center;\">Depending upon whether or not you&#8217;ve been unwell during the first trimester of your pregnancy or not, can determine what and how much you&#8217;ve been eating. I certainly made up for missed nutrients in my second trimester and it&#8217;s also when you should have more energy and appetite so you will enjoy it more. However come the third trimester there isn&#8217;t a great deal of room for you to indulge, so smaller portions, little and often became my way to go.<\/p>\n<p style=\"text-align: center;\">The remainder of this blog post will outline three of my favourite recipes that I have made during this pregnancy. It includes a starter, a main course and a dessert and if I know any nutritional information I will include them. You should be able to multitask through the prep so long as you keep an eye on the things you are cooking while chopping the salad for example.<\/p>\n<p><strong>Serves 4<\/strong><br \/>\n<strong> Prep 15 minutes<\/strong><br \/>\n<strong> Cook 10 minutes<\/strong><br \/>\n<strong> Total Time 25 minutes<\/strong><\/p>\n<p><strong>You Will Need;<br \/>\n<\/strong><br \/>\n<strong> \u2729 A Grill Frying Pan with a little oil<br \/>\n\u2729 A nice deep bowl per person for serving<br \/>\n\u2729 Colander for Washing the Salad<br \/>\n\u2729 A Sharp Knife for preparing the salad<br \/>\n\u2729 A pair of Kitchen Scissors for cutting the chicken and the bacon<br \/>\n\u2729 A deep saucepan filled with water for boiling the eggs<br \/>\n<\/strong><\/p>\n<p><strong>\u2729\u00a0Ingredients\u00a0\u2729<br \/>\n<\/strong><br \/>\n<b>\u2729 Mixed Salad Leaves &#8211; your preference &#8211; 50 grams per person<\/b><br \/>\n<b>\u2729 Chicken Breasts &#8211; 1 small breast per person &#8211; cut into shreds<\/b><br \/>\n<b>\u2729 Streaky Bacon &#8211; 2 Rashers per person &#8211; cut into shreds<\/b><br \/>\n<b>\u2729 Eggs &#8211; to Hard Boil &#8211; 1 egg per person<\/b><br \/>\n<b>\u2729 Cherry or Plum Tomatoes &#8211; your preference &#8211; washed and halved &#8211; several per person<\/b><br \/>\n<b>\u2729 Cucumber &#8211; Washed and Sliced into Chunks &#8211; 3cm of Cucumber per person<\/b><br \/>\n<b>\u2729 Croutons &#8211; You can use shop bought ones if you want to save time<\/b><br \/>\n<b>\u2729 Grated Parmesan\u00a0or Grated Cheddar Cheese &#8211; your preference<\/b><\/p>\n<p><strong>\u2729 Method \u2729<\/strong><\/p>\n<p><strong>1. Boil the Water for the Eggs and Hard Boil<\/strong><br \/>\n<strong>2. Grill the Chicken and Bacon together until cooked<\/strong><br \/>\n<strong>3. Wash the salad and chop accordingly<\/strong><br \/>\n<strong>4. Arrange the salad at the bottom of the bowls<\/strong><br \/>\n<strong>5. Arrange the other ingredients on top of the leaves making sure the chicken is last<\/strong><br \/>\n<strong>6. Grate some cheese over the top and finish with any dressing you may want<\/strong><br \/>\n<strong>7. Serve\u00a0<\/strong><b>immediately<\/b><\/p>\n<p><strong>TOP TIP<\/strong> &#8211; In order for a Salad to be classed as one of your five a day you need to eat 80 grams or more of it. By combining the grams of the salad leaves with the cucumber and tomato you should achieve the correct amount for it to count!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-2972\" src=\"http:\/\/severnwishes.co.uk\/wordpress\/wp-content\/uploads\/2018\/05\/Chicken-and-Bacon-Salad-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/severnwishes.co.uk\/wordpress\/wp-content\/uploads\/2018\/05\/Chicken-and-Bacon-Salad-300x300.jpg 300w, https:\/\/severnwishes.co.uk\/wordpress\/wp-content\/uploads\/2018\/05\/Chicken-and-Bacon-Salad-150x150.jpg 150w, https:\/\/severnwishes.co.uk\/wordpress\/wp-content\/uploads\/2018\/05\/Chicken-and-Bacon-Salad-768x768.jpg 768w, https:\/\/severnwishes.co.uk\/wordpress\/wp-content\/uploads\/2018\/05\/Chicken-and-Bacon-Salad.jpg 1000w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>MAIN<br \/>\n<\/strong><strong><br \/>\n\u2729 Sabrina&#8217;s Mild Spicy Meatballs in Tomato and Pepper Sauce with White Rice \u2729<\/strong><strong><br \/>\n<\/strong><\/p>\n<p>My family friendly Meatball Recipe is mildly spicy and tasty, it also contains two of your five a day with all the vegetables contained in the sauce&#8230; You can choose to remove or up the amount of spice dependent on your own tastes.<\/p>\n<p><strong>Serves 4<br \/>\nPrep 1 hour<br \/>\nCook 1 hour<br \/>\nTotal Time 2 hours<br \/>\n<\/strong><\/p>\n<p><strong>You Will Need;<\/strong><\/p>\n<p><strong>\u2729 A Large Saucepan with a Lid to cook the main sauce<br \/>\n\u2729 A Wooden Spoon<br \/>\n\u2729 Rice Cooker OR Large Saucepan with a Lid to cook the rice<br \/>\n\u2729 A Small Frying Pan<br \/>\n\u2729 Small Bowl<br \/>\n\u2729 Bowls to Serve the Meal in<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u2729\u00a0Ingredients\u00a0\u2729<br \/>\n<\/strong><br \/>\n<strong>For Meatballs<\/strong><\/p>\n<p><strong>\u2729 Lean Mince Beef (10% Fat or less &#8211; 500 grams)<br \/>\n<\/strong><strong style=\"color: #333333; font-style: normal;\">\u2729 Salt and Pepper To Taste<br \/>\n<strong>\u2729 1 Egg<br \/>\n\u2729 Italian Mixed Herbs (1 Tablespoon)<br \/>\n\u2729 Onion Powder (1 Teaspoon)<br \/>\n\u2729 Garlic Powder \/ Dried (1 Teaspoon)<\/strong><\/strong><\/p>\n<p><strong>For Sauce<\/strong><\/p>\n<p><strong>\u2729 Chopped Tomatoes (1 Tin &#8211; 400 grams)<\/strong><br \/>\n<strong> \u2729 Large White Onion (2 Onions &#8211; Finely Chopped)<\/strong><br \/>\n<strong> \u2729 Carrots (2 Carrots &#8211; 200 grams approx)<\/strong><br \/>\n<strong> \u2729 Plum Tomatoes (1 Tin Chopped &#8211; 400 grams)<\/strong><br \/>\n<strong> \u2729 Red Pepper (1 Pepper Sliced and Diced)<\/strong><br \/>\n<strong> \u2729 Beef Stock Cube\/Stock Pot &#8211; (Pots Do Melt Quicker)<\/strong><br \/>\n<strong> \u2729 Mild Chilli Powder &#8211; 2 Tablespoons<\/strong><br \/>\n<strong> \u2729 Oregano Herbs &#8211; 2 Tablespoons<\/strong><br \/>\n<strong> \u2729 Basil Herbs &#8211; 1 Tablespoon<\/strong><br \/>\n<strong> \u2729 Tomato Puree (50 grams)<\/strong><br \/>\n<strong> \u2729 Garlic Powder \/ Dried \/ Fresh (1 Tablespoon)<\/p>\n<p><\/strong><\/p>\n<p><strong>\u2729 Method \u2729<\/strong><\/p>\n<p><strong>1. To make the Meatballs add the binding ingredients to a small bowl and mix. Using clean and dry hands roll small amounts of Mince Beef together into meatball sized shapes and put them through the mixture to coat.<\/strong><br \/>\n<strong> 2. Fry off the Meatballs in a pan with a little oil, sealing the flavour in. Then add them to the saucepan ready for cooking within the sauce.<\/strong><br \/>\n<strong> 3. Fry the Onion and Peppers together once all the meatballs are done.<\/strong><br \/>\n<strong> 4. Once cooked through add the onion and peppers to the saucepan, then add the other vegetables ingredients including the tomatoes and carrots.<\/strong><br \/>\n<strong> 5. Stir these thoroughly and then add one beef stock cube\/pot.<\/strong><br \/>\n<strong> 6. Add all of the Herbs and Spices listed next, stir through until dissolved.<\/strong><br \/>\n<strong> 7. Simmer on a low heat stirring occasionally for up to an hour, until the sauce has thickened and the meatballs are cooked all the way through.<\/strong><br \/>\n<strong> 8. Serve on a bed of Rice and if you want to, a sprinkle of cheese on the top! Yum!<\/strong><\/p>\n<p><strong>TOP TIP<\/strong> &#8211; Always add the spices last before starting the simmering, they will dissolve into the liquid and really marinate over the hour as the liquid is absorbed. Alternatively just eat it on it&#8217;s own&#8230;<\/p>\n<p><strong>Serves &#8211; 12 people<\/strong><br \/>\n<strong> Prep &#8211; 5 minutes<\/strong><br \/>\n<strong> Cook &#8211; 5 minutes<\/strong><br \/>\n<strong> Chill Time &#8211; 3 hours<\/strong><br \/>\n<strong> Total Time &#8211; 3 hours and 10 minutes<\/strong><br \/>\n<strong> Nutrition &#8211; Egg Free, Vegetarian and Gluten Free.<\/strong><\/p>\n<p><strong>You Will Need;<\/strong><br \/>\n<strong> \u2729\u00a0An Ice Cream Churner Whose Inner Pot Has Been Frozen Prior To Use (Overnight)<\/strong><br \/>\n<strong> \u2729\u00a0A Large Shallow Saucepan<\/strong><br \/>\n<strong> \u2729\u00a0A Wooden Spoon<\/strong><br \/>\n<strong> \u2729 A\u00a0Tub For Freezing The Ice Cream In Afterwards<\/strong><\/p>\n<p><strong>\u2729\u00a0Ingredients\u00a0\u2729<\/strong><br \/>\n<strong>\u2729 Double\/Heavy Cream &#8211; 2 Cups<\/strong><br \/>\n<strong> \u2729 Milk &#8211; 3\/4 Cup<\/strong><br \/>\n<strong> \u2729 Salt &#8211; 1\/8 Teaspoon<\/strong><br \/>\n<strong> \u2729 Sugar (White) &#8211; 3\/4 Cup<\/strong><br \/>\n<strong> \u2729 Vanilla Essence &#8211; 2 Teaspoons<\/strong><\/p>\n<p><strong>\u2729 Method \u2729<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>1. Add all of the ingredients to a large shallow saucepan.<\/strong><br \/>\n<strong> 2. Heat them on a Medium Heat until it begins to Bubble.<\/strong><br \/>\n<strong> 3. When Bubbling starts Turn Off the Heat and Mix until all the Sugar is Dissolved.<\/strong><br \/>\n<strong> 4. Allow the Mixture to Cool down to Room Temperature.<\/strong><br \/>\n<strong> 5. Pour the Mixture into a previously chilled Ice Cream Churner according to fill level and follow the manufacturers directions for quantity and times.<\/strong><br \/>\n<strong> 6. Once Churned properly carefully Spoon the Mixture into a Tub and Freeze for 3 hours before Serving.
